Vegetable Nut Burgers

Although the name and ingredients list can be a bit intimidating, these tasty burgers are sure to be the hit of any party.


1 Fennel Bulb diced small
1 tablespoon Olive Oil
1/2 cup Onion minced
2 tablespoons Garlic minced
4 cups Plum Tomatoes seeded diced
1/2 cup Basil finely shredded
Salt to taste
Pepper to taste
2 tablespoons Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
1 1/2 cups Brown Rice cooked
1/2 cup Wild Rice cooked
2 cups Lentils cooked
1/2 cup Millet cooked
1/2 cup Pumpkin Seeds ground
1/2 cup Cashew Butter
1/2 cup Onion chopped
1/2 teaspoon Celery Seed
3 Cloves Of Garlic minced
1/2 cup Red Bell Pepper
4 tablespoons Parsley minced
3 tablespoons Low Salt Soy Sauce
1/4 cup Almond finely ground
1 teaspoon Dried Sage
1/2 cup Olive Oil for sauteeing

1. Coulis: Saute fennel in oil until soft.

2. Add onion, garlic and tomatoes; mix lightly. Remove from heat and stir in remaining ingredients.

3. Let sit at room temperature for 4 hours to combine flavors.

4. Burgers: Combine all burger ingredients in a bowl and mix thoroughly.

5. transfer to a food processor and pulse briefly to form a meal-like consistency.

6. Form into 12 patties. Grill on a well-oiled vegetable grill, saute for 3 to 4 minutes on each side, until brown.

Prep Time = 25 Min?!! I think not! Just from reading the recipe I disagree!!! I guess maybe if you take away the 4 hours that flavors combine... and assume that all of your ingredients are already prepped accordingly (i.e.: cooked, shredded, minced, etc.)... MAYBE then 15 min. Otherwise, this recipe takes several hours! Nevertheless, it does sound great and I am trying it now -- preparing it for grilling tomorrow. Hoping these burgers are delicious!
