Vegetarian Red Beans and Seven-Grain Dirty Rice

Ingredients:

1/2 Cup Corn fresh or frozen
1/2 Teaspoon Salt pepper to taste
3 Tablespoons Parsley or Coriander Chopped
1 Bay Leaf torn into small
2 Teaspoons Chili Powder or more to taste
2 Cups Brown Rice (7oz)
1/2 Cup Celery chop
1 Tablespoon Cilantro Dried Ground
3 Cloves Of Garlic mince
1 Tablespoon Cumin Seed ;
3 3/4 Cups Vegetable Stock (up to 2)
1 1/2 Cups Red Onions chop
1 Cup Carrot fine dice
1 Jalapeno Pepper seed, mince
1 1/2 Cups Red Beans cook
1 1/2 Cups Tomatoes chop
3 Tablespoons Cilantro chop

Directions:

1. Place a medium-sized pot over medium heat.

2. Add the first 9 ingredients and heat for 3 to 5 minutes, stirring almost constantly, until lightly browned.

3. In another pot, bring the stock and bay leaf to a boil and add to the rice mixture.

4. Cover the pan, lower the heat, and simmer for 15 minutes.

5. Add the beans, tomatoes, corn, and salt. Stir, cover, and simmer for 15 more minutes, or until the liquid is absorbed.

6. Remove from the heat and add the parsley and cilantro.

7. Serve. 308 calories, 2.7 grams fat per 1 cup serving.
