This is a fairly simple recipe and is great if you happen to have some leftover shrimp from a party or plan on buying some, anyway. Its a basic bruschetta with the addition of a few key ingredients to give it a little kick.
1. Preheat oven to 400 F (200 C) and and prepare muffin tin.
2. Gently fold the dry ingredients into the wet (larger bowl) until just mixed.
3. Spoon into prepared pan and decorate top of each muffin with a walnut or pecan half.
4. Bake for 20 to 25 minutes. Remove from pan and cool on rack.
