Winter Carrot Soup

Ingredients:

6 Ounces Tomato Paste (2/3 cup) can
1/4 Teaspoon Ground Cumin Seed
4 Carrots grated
1/4 Teaspoon Pepper
1 Tablespoon Soy Sauce
4 Cups Vegetable Stock
1 Tablespoon Safflower Oil
1/2 Teaspoon Thyme Leaves

Directions:

1. GARNISH: scallion curls or Herbed Garlic Croutons (optional).

2. In Dutch oven or 4-5 qt saucepan, heat oil.

3. Stir in carrots and onion; saute until tender, about 5 minutes.

4. Add remaining ingredients, increase heat, and cover.

5. When mixture reaches a boil, reduce heat to med and simmer for about 5 minutes.

6. Top with garnish if desired. VARIATIONS: - add 1/2 cup raisins-cook soup until they are plump & tender. - add 1/2 cup chopped apple, simmering till tender - add 1/2 cup cooked brown rice or 1/2 cup raw cashews
