Easy Corn Puff

This quick and easy recipe is great to have with just about anything. The flavors of the cheese and corn compliment each other, as well as whatever meat you serve.

Ingredients:

20 Ounces Frozen Corn or chopped Broccoli
1 Cup Baking Mix
1 Cup Milk (or use about 1/2 C of powdered milk and about 1 C water)
2 Unit Eggs large
1/2 Teaspoon Salt approximately
1 Cup Cheddar Cheese shredded (about 4 ozs.)

Directions:

1. Heat oven to 325 degrees F Butter 5-cup souffle dish or 1 1/2-quart round casserole.

2. Cook corn as directed on package; drain. Beat Baking Mix, milk, eggs, and salt with hand beater until smooth.

3. Stir in corn and cheese. Pour into souffle dish.

4. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour.
