Home-made Pretzels

1 1/4 Unit Water WARM
1 Package Yeast
1/2 Teaspoon Sugar
3 1/2 Cups Bread Flour
1 Unit Egg BEATEN
1 Tablespoon Water
1 Unit Sesame Seeds
1 Unit Salt to taste

1. Mix yeast and sugar with 1/4 c water.

2. Set aside until bubbly. Place flour and yeast mixture into a mixing bowl and blend to form a dough.

3. Knead on a floured surface for about 5 minutes, until smooth and elastic.

4. Place in a greased bowl, cover, let rise 1-1 1/2 hours.

5. Punch down and shape the pretzels as follows: Divide dough into 12 pieces and shape into sticks 6 inches long.

6. shape into knots. Place on greased cookie sheets.

7. Cover and let rise 45 minutes. Glaze with 1 egg beaten with 1 T of water.

8. Sprinkle tops of pretzels with coarse salt or sesame seeds.

9. Preheat oven to 475F and bake for 10 minutes.
