Ingredients:

1 1/2 Teaspoons Baking Powder
1 Egg plus:
1 1/2 Cups Flour * (6 to 7)
1/2 Cup Fresh Orange Juice see note
1/4 Teaspoon Salt cayenne pepper
3 Eggs whites
1/4 Cup Milk skim
1 Cup Sugar pulverized
1 Orange grated peel of
4 Tablespoons Butter softened
1/2 Cup Coconut shredded

Directions:

1. Preheat oven to 300 degrees.

2. Grease a 13" x 9" pan. Cream sugar, butter and egg until fluffy; add orange peel.

3. Combine flour, salt and baking powder with liquid; pour into pan.

4. For topping, beat egg whites until very stiff.

5. Add sugar and beat until very stiff. Fold in coconut, spread over batter.

6. Bake 30-40 minutes. Cool and cut into squares.
