Singin' Hinnies

Ingredients:

2 Teaspoons Baking Powder
2 1/2 Cups Flour sifted, all-purpose
2 Ounces Butter Or Vegetable, 3 Tbl
2 Ounces Lard (2lbs)
1/4 Teaspoon Salt to taste ;
1/4 Cup Milk cold
3/4 Cup Currants chopped

Directions:

1. Sift the flour, baking powder and salt into a bowl.

2. Rub in the butter and lard with your fingers until the mixture resembles breadcrumbs.

3. Stir in the currants and add enough milk to make a firm dough.

4. Roll out the dough on a well-floured board to about 1/4 inch thickness and cut into rounds about 2.

5. 5 inches across. Grease a heavy frying pan or griddle with a little oil and warm over low heat.

6. Place 3 or 4 cakes in the pan and cook for about 6 minutes each side until they are well browned.

7. Remove from the pan, slice them in half and place a dollop of butter in the middle before putting them back together.

8. Keep warm in the oven until they're all cooked.
