Ingredients:

1/4 Cup Applesauce 1/4 Cup Applesauce ;
1/2 Cup Brown Sugar 1/2 Cup Brown sugar packed
1 1/2 Cups Dark Molasses 1 1/2 Cups Dark molasses (treacle)
1/2 Cup Water 1/2 Cup Cold water
3 Cups Flour 3 Cups White flour with high gluten
3 Cups Whole Wheat Flour 3 Cups Whole wheat flour finely ground
2 Teaspoons Allspice 2 Teaspoons Allspice (opt.)
2 Teaspoons Ginger 2 Teaspoons Ginger grated
2 Teaspoons Cloves 2 Teaspoons Cloves (up to 6)
2 Teaspoons Cinnamon 2 Teaspoons Cinnamon to garnish
2 Teaspoons Vanilla 2 Teaspoons Vanilla or Almond extract to
2 Teaspoons Baking Soda 2 Teaspoons Baking soda heaping
1/2 Teaspoon Salt 1/2 Teaspoon Salt and pepper to taste
1 Tablespoon Water 1 Tablespoon Cold water

Directions:

1. Mix the applesauce, brown sugar and molasses together thoroughly.

2. Stir in 1/2 cup cold water and vanilla. Mix together dry ingredients.

3. Add to the dough. Add 1 T cold water.

4. Mix well. Cover bowl and chill dough (for at least one hour).

5. Preheat oven to 350. Roll out dough thick (1/2 inch).

6. Cuts with small glass (1-2 inch diameter). Place on lightly oiled (sprayed) cookie sheet.

7. Bake about 10 minutes (until no imprint remains when touched lightly with finger).
