White Sauce for Macaroni

Ingredients:

2 Cups Milk nonfat
2 Tablespoons Carrots finely chopped
2 Tablespoons Celery finely chopped
4 Tablespoons Onions finely chopped
4 Peppercorns whole
1 Bay Leaf crumbled
2 Tablespoons Butter (1/4 stick) cut into 6 pieces
2 Tablespoons Flour unsifted

Directions:

1. In a heavy pot combine the milk,carrot,celery,onion,peppercorns,clove and bay leaf.

2. Heat until bubbles form around edge of pot.Set aside for 5 minutes and strain.

3. Over moderate heat,melt the butter in the saucepan.

4. Add the flour and stir until flour and butter are blended.

5. Cook over moderate heat for 1 minute,stirring constantly.

6. Add the strained milk in a slow steady stream as you stir constantly with a whisk.

7. Switch to a wooden spoon and continue to stir as the mixture comes up to a simmer.

8. Turn heat down and simmer for 5 to 10 minutes,stirring occasionally,until the sauce becomes smooth and thick.

9. Season to taste with nutmeg ans salt and pepper.
