Onion Squares

Ingredients:

1/2 cup Cornmeal
1 teaspoon Sugar
1 1/2 teaspoons Baking Powder
3 tablespoons Canola Oil
1/2 cup Skim Milk
1 Egg whites
10 oz Frozen Corn thawed
2 dash Hot Sauce
2 tablespoons Parmesan Cheese

Directions:

1. Preheat oven to 450 degrees.

2. Saute onion slices in nonstick fry pan until soft and lightly browned.

3. Add yogurt, dill weed and lite salt. In a separate bowl combine flour, cornmeal, sugar, baking powder,oil, skim milk and egg white.

4. Mix well. Add corn and Tabasco. Pour batter into lightly oiled 9 inch square pan.

5. Spread onion mixture over batter. Sprinkle Parmesan over onions.

6. Bake for 25-30 minutes. Cut into squares to serve.
